Green Sense Ajwain,a small oval shaped aromatic seed may taste a bit bitter or pungent in the first go but work their magic slowly and steadily.The leaves come from the ajwain plant which is often called the “Indian Borage”.They are usually sold whole.The seeds are often chewed on their own for medicinal value, tasting bitingly hot and bitter, leaving the tongue numb for a while.Cooking ajwain mellows it somewhat ;when crushed, they have a strong and distinctive thyme-like fragrance.
